- Brewing consistency. If you're buying a cup rather than beans, taste for balance and clean finish rather than just strength. Over-extracted, bitter cups are common where equipment isn't maintained or dialed in.
- Willingness to grind to order. A roaster that grinds beans on the spot for your brew method (V60, moka pot, espresso) is paying attention to freshness, not just turnover.
